CherryMan Black Forest Icebox Cake


8 Servings (1 slice of cake per serving)
  • 3 c heavy cream
  • 3 tbs sugar
  • 2 tsp vanilla
  • 77 thin chocolate wafer cookies
  • 1 jar (12oz) CherryMan Traditional Maraschino Cherries, drained and chopped
  • 9 CherryMan Traditional Maraschino Cherries with stem


  1. In a large bowl beat cream, sugar, and vanilla with a hand mixer until soft peaks form. Spread a thin layer of whipped cream on a serving platter. Place 1 cookie in the center of the platter then arrange 6 more cookies around the one in the center in a single layer. Spread about ¾ cup whipped cream over cookies and sprinkle with 1 tablespoon cherries.

  2. Repeat layering with remaining cookies, cream, and cherries, making about 11 layers total, ending with a layer of whipped cream. Lightly cover with plastic wrap and refrigerate overnight.

  3. Right before serving, garnish with 1 cherry in the center of the cake and 8 cherries around the edge.
