36 Servings (1 cookie per serving)
- 1 ½ c suger
- ½ c butter
- ½ c coconut oil (solid)
- 2 eggs
- 1 tbs maraschino cherry juice
- 1 tsp vanilla
- 3 c flour
- 1 tsp baking soda
- ½ tsp salt
- 2 c rolled oats
- ¾ c drained and chopped maraschino cherries
- ½ cup shredded sweetened coconut
Preheat oven to 350°F.
Blend coconut oil, eggs, butter, sugar, cherry juice, and vanilla.
In a seperate bowl, sift flour, salt, and baking soda.
Combine flour and butter mixture.
Add oats, coconut and cherries, mix well.
Roll dough in small balls and place on ungreased cookie sheet.
Bake at 350 for 12 minutes.
