CherryMan Popcorn Balls

Instructions  

6 servings (1 popcorn ball per serving)

  • 1 (10 or 12 oz) jar of CherryMan Maraschino Cherries; chopped, drained and patted dry
  • 8 c popped popcorn (¼ c unpopped kernels or 2 bags of microwave popcorn)
  • 2 tbs. butter
  • ¼ c sugar
  • ½ c honey
  • 1/3 c almond butter
  • ¾ tsp salt
  • ½ cup milk chocolate chips
  • 6 wooden skewers or popsicle sticks

Directions

  1. Place popped popcorn in a large bowl and set aside.

  2. In a small saucepan over medium-low heat, melt butter. Stir in sugar until it dissolves. Add honey and bring to a gentle boil, then stir in almond butter and salt. Cook, stirring occasionally, until ingredients are fully incorporated, about 3 minutes.

  3. Pour mixture over popcorn and gently mix with a wooden spoon until thoroughly combined. Fold in the cherries.

  4. When the mixture is cool enough to handle, using buttered or oiled hands, form into 2 ½" balls and place on a lined baking sheet. If desired, skewer the center of each popcorn ball.

  5. Melt chocolate over a double broiler (or in 30-second intervals in the microwave at 50% power, stirring between each interval) until smooth. Lightly drizzle over popcorn balls.
